The things to consider when deciding the size of your cake are:
Number of guests
Design
Budget
How the cake is being served
The number of guests and servings required typically determine the size of a cake.
The design of the cake is of course a huge influencing factor, however, cake props and iced polystyrene cake dummies can be incorporated into a design ensuring you needn't have more cake than required for you and your guests.
The design of a cake determines the height of each tier and the overall height of the finished cake. The trend is for extended height tiers (5 - 6 inches tall). Traditionally, a serving of cake was thought to be a 1" x 2" slice of cake however, if opting for extended height tiers, a serving can be a 1" x 1" (a finger portion) slice of cake.
Budget will influence both design and the number and size of servings.
Serving style can be as a wedding breakfast dessert or petit finger portions with the evening buffet, a taste of cake to accompany tea and coffee.
Square cakes yield more servings than round cakes.
